According to one of our new members to the SG, you lose half of your defense. I haven't taken the time to verify that, but it sounds right, and I trust the source.

Stealth isn't good for using as a defensive power while fighting, though.

Hide, on the other hand, may present different numbers, of which I'm not certain of.
